How a person answers questions is often more important than what the answer is, and the longer you simply talk to a person the better chance you have of understanding their personality. You are a scientist, that is fine, however you still work in a group and you still work to bring value to a company. If you are difficult to work with, if you will complain about every little thing, if you will hide discoveries from the company for personal gain, if you are arrogant, you should not get the job, and those personality traits are easier to spot with longer interview processes. Another reason multiple people interview a candidate is because often candidates treat people differently. What if the candidate treats women differently then men? What if the person treats his/her boss great, but is nasty towards co-workers? What if it is the opposite? It is sometimes difficult to imagine those things, but try to picture you are on the other side of the table at an interview. Double that person's salary, and that is how much you are spending on that person in a given year.
